Our Story

Welcome to the Golden Burro and Brass Ass Saloon!

The Burro is a Leadville success story. Tourists are naturally drawn to the iconic neon burro sign with its wagging tail and what the historians refer to as a stunning example of “mid-century commercial design.”

We are bringing an upscale dining experience to downtown Leadville. And we’re doing it with local talent found right here in Leadville! We believe that our team rivals anything in the big cities, from the remodeling crew to the kitchen staff and servers. Oliver Campe, our Pastry Chef from Belgium, is the man behind the Burro’s famous Liege waffles!

At the Golden Burro, we believe in healthy, delicious plant-based foods, served up by friendly, knowledgable staff. Here are our core values.


We believe that our restaurant is a standout example of the good health and sustainability that is Colorado. Plant-based food goes hand-in-hand with sustainability. Everyone’s heard about the water shortage in the Colorado river basin. But did you know 90% of the water from the river is used for agriculture? 70% of the water goes just to grow crops fed to animals that are slaughtered. You’re literally growing crops that could make nine plant burgers and turning it into just one beef burger. On the whole it takes 2600 gallons of water to make one pound of beef. That’s at least a year of long hot showers, which we enjoy without any guilt.

Secondly, we believe in being good to the earth. All our fruit and veggie scraps are donated to Cloud City Conservation for their composting program and we also use paper straws and compostable disposables to reduce our landfill waste.

Health Conscious

Along with serving only plant-based food and beverages, we also take measures in the kitchen to avoid exposure with excessive pesticides or toxins. We avoid contact with aluminum cookware. We follow the Environmental Working Group’s Dirty Dozen list to keep excessive pesticides in the dirtiest fruits and veggies off our menu. We serve organic foods wherever possible, with particular care to do so for the Dirty Dozen list whenever possible.

Our goal is to make our food so delicious, and our service so exemplary, that you can’t help coming back again and again! It’s not just about getting the order right or bringing the food out in a timely manner. We want our customers to feel welcome and know that they are important to us.

We believe that being good enough isn’t. We never stop trying to do it better, no matter how good we are. We constantly strive to “raise the bar.”

We believe in honesty and trust and that this form the bond that holds organizations and relationships together.

We Love our staff

We know that our ability to foster customer loyalty depends on our employees. We believe in paying a living wage; all of our employees are paid at least $15/hour, plus tips.

We believe in the ongoing training and development of our people. We see it as a worthy investment in the future of the restaurant and as a way of enabling our people to achieve their potential in whatever they do. And we believe that our continued success depends on teamwork. We know that great achievements are only possible from helping and respecting each other.
